What's For Dinner This Week!

SNOWING!!! You guys, snow in Texas is few and far between. I am so warm and cozy inside while my kids are building some pretty cute snowmen! It really is magical. But, beyond the magical snow day is a week full of planned meals. You guys gave me great feedback about my weekly meal plans and I am so happy that I am really helping you! I am super excited for this wintery weather and adding in these extra warm dinners this week. Although, this is Texas, and I am sure we will be back to the warmer weather soon. I am definitely using my favorite kitchen gadgets to make them easy and delicious. I know the Instapot has been around for a while, but if you don't have one - now is the time to invest in one. I have the 8 quart and it definitely works for my family of four. I use it weekly to make hard boiled eggs, steamed artichokes, big batches of oatmeal and rice and yummy soups, just to name a few. My Le Creuset dutch oven is also a huge favorite of mine. I have two sizes, the 5-6 quart and 7-8 quart. I love them both and pretty much use them both interchangeably. I am super excited with the recipes I am making this week. As always, let me know if you make any of these delicious meals. In the meantime, I'll be taking photos of the snow the rest of the day. Such a wintery treat!


What's For Dinner This Week!


Monday

The Modern Proper, Chicken and White Bean Instapot Chili, is absolutely easy and delicious. I love adding toppings on the side for everyone to customize.


Tuesday


The Defined Dish Indian - Style Vegetable Curry - It's on page 203 of the Defined Dish cookbook. It is absolutely warm and comforting. This Defined Dish cookbook is my fave :)

Wednesday


This Fitchen Instapot Cabbage Soup is easy and so comforting. It is loaded with veggies and herbs and everyone loves it. I of course make a crunchy garlic bread for the kids to dip into it.

Thursday


The Whole Kitchen sink sausage and potato recipe is yummy. I use a milk organic chicken sausage. Just throw everything in and bake it.


Friday


Eat the Grains Fish Taco Bowls are easy and fully customizable. Use whatever fish you like. Use cauliflower rice, white rice, you name it. Easy and will satisfy the dinner variety.
