What's For Dinner This Week!

Happy 2021! Back to Work, Back to School, Back to the routine. We have been close to home with a winter break schedule over here, so I am looking forward to being back in some resemblance of a routine. With routine comes earlier mornings, set times for lunch (we are still virtual learning) and of course hungry at an earlier dinner time. While meal prepping certainly makes things easier, it isn't always possible. Having a dinner plan helps me get through the week without spending time thinking about what to make. I always share that the internet provides so many great recipes that you don't always have to reinvent the wheel. I, of course love to put my own spin on things, but love using already out in the universe recipes to keep things interesting. This week I am using recipes from two of my absolute favorite cookbooks, Defined Dish Cookbook and Skinnytaste to pull recipes from. What's For Dinner This Week!


Monday


Chicken and Wild Rice Soup from Spend With Pennies is a family favorite. I love making soups because they last for a few meals and everyone around here loves them. Substitute your protein and add in pasta instead of rice. Customize it to your liking.


Tuesday


The weather in Austin is supposed to be beautiful so we are going to grill salmon and artichokes. Here are my two favorite grilling recipes.



Wednesday


The Defined Dish Spaghetti Squash Pad Thai - This recipe is absolutely delicious. Don't be fooled by spaghetti squash - it works like noodles and tastes great, too!


Thursday


The Skinny Taste taquitos are delicious and easy. You can customize and substitute the fillings and everyone is happy. I pair this with guacamole, black beans and salsa.


Friday


The Defined Dish Chicken and Broccoli is better than any takeout! Pair it with cauliflower rice or your favorite rice and its the perfect way to kick off the weekend.
