Healthy Bagel? Give these a try!

Breakfast has become an even bigger meal around our house these days. In an effort to reduce white flour and change things up, I've started making "healthier" bagels. Lashes and Lemons (www.lashesandlemons.com) has created a delicious recipe that I am loving. You can find the recipe here. These are super easy, makes enough for 2 people at a time and can be made in advance. I've been doubling it each time we make them so we have some extra to save. Today we had scrambled eggs, spinach and everything but the bagel seasoning on top. You can customize them with favorite spread, too. If you don't like the taste of coconut, you can always substitute the flour with almond, cassava or your favorite. Simply store them in these glass food containers in the fridge for up to 2 days. Just reheat when you are ready and you are good to go. New breakfast ideas that everyone is sure to love - and feel good about eating, too. Let me know if you try them. xo, Jules
