What's For Dinner Tonight

Tonight we are having one of my favorite go to family dinners. Thanks to these delicious Siete Tortillas and Chips, these chicken tacos are absolutely delicious.

Here's what you need:

  1. Ground Chicken (can also use beef, turkey, tofu or veggies with mushrooms)

  2. Tortillas of Choice: I like Siete Casava Flour and Whole Foods Brand Regular Flour

  3. Chopped Greens: Lettuce, Spinach or Cabbage

  4. Spices: salt, pepper, cumin, coriander, paprika, chili powder

  5. Chopped Tomatoes

  6. Guacamole

  7. Jalepenos

  8. Cookie Sheet

First, pre-heat your oven to 325 degrees. Next, saute your chicken in a skillet on medium heat. At our rental home they have all Green Pan pots and pans. I love cooking with their non- stick line. Really easy cleanup, too. Ok, next add in a few dashes of spices while the chicken is cooking. Next, heat a small skillet on low and add the tortillas one at a time to slightly warm up. Then take a cookie sheet and arrange the warm tortillas flat on top. Once the chicken is fully cooked, add a spoonful of the chicken to each one and fold in half. Place the cookie sheet in the oven for 5 - 10 minutes depending on crispy you like your tacos. Finally create a DYI station of greens, tomatoes, guacamole and jalepenos. Let your guests create their own. Let me know if you make them! Enjoy!
