Delicious Gluten and Dairy Free Enchiladas

When I think of enchiladas, I always think of that delicious cheesy goodness that comes with them. Well, in this dairy free world of ours, I wanted to come up with something just as tasty. Thanks to this incredible Siete green enchilada sauce and these yummy Siete tortillas - my version was easy to create. I saute any variation of shredded chicken with onions, garlic and peppers and/or spinach in one skillet. My new favorite non stick non toxic pans are made by Green Pan. In another skillet, I heat each tortilla until warm. I then prepare a baking pan by putting a thin amount of enchilada sauce on the bottom. I love this incredible Siete green enchilada sauce so much. The flavor is melt in your mouth amazing. I then scoop out a portion of the chicken mixture into a tortilla one at a time and roll them up, placing them one by one in the prepared baking pan. Be careful not to use your hands as the tortillas can be - burn you hot! Once your pan is full, pour the remainder of the sauce on top and spread evenly to coat. Place in a 350 degree oven for 25 minutes or until desired crispiness. Top with your favorite salsa, avocado or even some dairy free cheese. This recipe can be easily adapted to your preferences of protein, veggies and tortillas. You can find all the ingredients that I use below.







Here's what you need to feed 4:

  1. 2 - 4 Cups of Shredded Chicken or Protein of Choice

  2. 1T Minced Garlic

  3. 1/2 Onion Sliced Thin

  4. 1 Bell Pepper Sliced Thin

  5. 1 Cup Spinach

  6. 1 Package of these yummy Siete Tortillas (or tortillas of your choice)

  7. Avocado, Salsa and Dairy Free Cheese (or real cheese if that's your thing)

Bake in a 350 degree oven for 20 - 25 minutes. Top with your favorite toppings. Enjoy!
